what did everyone serve up today?

For us, the older standby, recipe X-perfect prime rib came through once again. Served along with some cream cheese , garlic mashed potatoes, and grilled asparagus..

Recently got out the Sous Vide. Cooked some steaks on Sunday and yesterday for both sides of the family. I’m pretty impressed with how they turned out both times

Sous Vide is my favorite for pork. I buy loins and manually slice them down. Then, season them and let them set for an hour or so before vacuum seasoning. Straight from the freezer into the Sous Vide set to 10-20 degrees below desired finish temp (depending on thickness of cut) before searing them on the stove/grill. Totally flipped my wife’s opinion on pork.
 
Seared and then roasted a tenderloin. Never done it before but my wife got me a Meater+ for Father’s Day (the meat thermometer not the XXXL dildo), and it cooked perfectly. Was delish.

Nice looking piece of meat Papa Claus. We're saving our rib roast for this weekend or New Years.

Although we did slice off 1-pound from the roast yesterday and fried it in a cast iron skillet with rosemary, thyme, pepper, garlic, ghee and Misty's. It was sooooo fooking good.
 
I was on call so couldn’t cook because I was in the hospital. I usually do the cooking. My wife cooked an impressively dry ham. Christmas was still good when I was home! Kids are 6, 4, and 4 months so the magic of Christmas is still very strong in our house…really fun time to be a parent.

Those are great ages for Christmas. I'm looking forward to grandkids that age.
