Cooked to 135. I would stop at 120 if you're cooking for yourself or other rare meat lovers. Overall I'd skip the whole Wellington thing and just roast the tenderloin plain, the extra layers don't add all that much outside of looking fancy. Still more tender than a crockpot roast and more delicious.

Christmas Eve tradition is a combo of traditional Swedish (dads side) / Polish (moms side) food.

Swedish
Lutefisk over boiled potatoes
Pickled herring
Swedish meatballs
Ostakaka and Lingenberries
Potatoe Bologna

Polish
Smoked polish sausage from Frank Stoysich
Homemade Pierogies
Alcohol

Christmas Day we have been going out for Hibachi the last few years and enjoy not cooking on Christmas Day
My wife has a lot of Swede in her too..............potato bologna is a Xmas staple for us
 
Ate like a fucking king this weekend - God blessed my mother in law and wife who in turn blessed us.

23rd - Lobster Newberg (with a scallop and shrimp)/ Teryaki glazed Short Ribs over mashed potatoes. Black Forest Cake and Guinness
24th - Miso glazed Sea Bass with asparagus and forbidden rice - au gratin potatoes. Sticky Toffee Pudding and Guinness
25th - Pretty simple brunch. Casey's Taco Za and leftovers for dinner

I would reverse sear those babies. Smoke first to 100 degrees then sear hard to 120 if you want medium rare. It will climb another 10 degrees after taking them off

I melt butter and mix with the seasoning.. I'll brush on when I flip them and while they rest.

I wouldn't say I do a shit ton though
 
Went to Sam’s today and the wife relented…bought a prime rib roast. Boneless so it’s basically a rib roast right? Gonna make it after new year because the younger daughter is out of town next week for practice and travel with Husker WBB. Will let you know how it turns out. Going to oven roast because I’m a poor without a smoker…

I usually will sear it on my grill and smoke it to finish it. But I only do that with these tomahawks.

A regular ribeye I will just grill.

There is those people who use cast iron skillets on steaks and I guess I'm not that fancy
Seared two (beef) filets tonight in the cast iron skillet (in the kitchen) and finished them in the oven. A little peppercorn gravy sauce, twice-baked taters, a few asparagus spears and a very nice red blend that came from a client.

What's the plan? Bought a small prime rib roast and found a whole frozen pheasant I'm going to do something with. First time cooking pheasant, should be interesting. Trying not to not overcook my beef like I did with the Wellington last year.
