Here’s the thing - people that don’t hunt a lot, try a bunch of wild game 3-4 times then draw conclusions out which meat is good/bad based on those and then shout it from the roof top.

From someone who has a half a cow, elk, antelope, 2 deer in his freezer from this year who cooks it 3-4 times a week. If you remove silver skin, and don’t overcook it. Quarter them all in a reasonable time after the kill and cool the meat. They all taste pretty damn close to the same.

The cow has more fat - which comes in handy a few ways.

People that say one tastes terrible - had it cooked wrong.

Same rules apply to most types of waterfowl, Canadians can taste like pretty good steaks. Gadwall can taste like a fine cut of meat you’d expect from a nice steakhouse.

Squirrel and Rabbit are phenomenal. I haven’t eaten raccoon or coyote, not real sure why

I had horse in Iceland. Tastes the exact same as elk/venison

There was a restaurant in the Delta in Vietnam that my Vietnamese counterpart always wanted to go to. Its name was Vinh Ky and they specialized in exotic food. Stuff like rice rats, monkey, snake and water buffalo. Just awful. But the weirdest thing on the menu appeared fairly innocuous. It was called fish lip soup and was a clear broth with the membrane from the fish mouth floating in it. They looked and tasted like rubber bands and was probably the stupidest dish I've ever seen.

I was in a village in the very southern part of Vietnam and was offered rat jerky. I passed.

Yes. Not a fan. Ever had a durian popsicle? Little Saigon here in Orange County has durian any way you want it. They say once you get past the smell it's good but that only works for me with Kim Chi.

I’d say you did alright marrying a successful woman and getting away if there was nothing here you wanted to stay for. I enjoy being here (moved back 3 years ago). I’m all about the outdoors and the family land caters to that. In fact my new business thrives on the outdoors so it works out. Although we may be moving back to Omaha for several years to take care of some things. Fucking hate cities

Did you ever have fish maw (air bladder) soup? It’s actually pretty tasty, but I also don’t mind fish lip soup (definitely rubber bands, but I’ve had worse things for sure).

I don’t crave it like some, but I’ll eat it when offered usually. Can be pretty decent when lightly fried and I also like it frozen (a bit ice cream-like).

I mistakenly ordered a durian and banana pizza a few months ago (turns out my Hanzi still needs a lot of work), but it was fairly light on the durian, so really just tasted like a custard dessert pizza. Not what we wanted, but my Kiwi friend and I managed to finish it. He relentlessly gives me shit about it whenever he has the chance.

You completely lost all of my respect at Canadian Sky Carp can taste like a pretty good steak.

Haha tbh that one surprised me too, they’ve always been jerky birds until I was getting a lot of them this year and decided to start messing with cooking them different.

Just started really taking the time to clean the breast perfect, and getting all the silver skin and discolored meat off the breast. Butterflied, pounded out and forked, brined for 24 hours.

Good steak might be a bit aggressive, more like “Applebees on their A game” quality steak. Absolute shit-ton of protein without any fat though.

One concession I’ll make, fucking Gordon Ramsey couldn’t make a merganser taste good. Those birds are meant to be stuffed or left alone
