Yeah. Brined overnight. Smoked at 225 for 3 hours. Finished in the oven to 165 internal. Rested for 15 minutes. Just dry as shit.
That sucks. I didn’t know this, but I guess that some turkey suppliers state whether the bird was a hen or a tom. I guess the hens are juicer unlike the toms that are dry and tough.

Are you using a Traeger or similar pellet smoker? I just followed this recipe and my family ate the shit out of it. I wish the skin was a touch crispier but it was $$$.

Traeger knock off. Didn’t follow the Traeger directions. Found another pellet smoker recipe. Clearly the wrong one.
