How do you like your steak cooked??

Smoked low & slow over oak or hickory until its internal temperature is about 105-110 or so, then transferred over to the griddle that's been cranked up to about 650 to finish it with a nice sear. Medium rare, of course.

Blue is my preferred on certain cuts but I will eat up through to med rare. I always order rare at restaurants because people do not usually make them to the correct temp. Either direction from there I am happy.

It’s rarely why I’ll order steak out

If you have never done a blue steak I recommend trying it once. The flavor and texture is just unreal. No sauce salt or pepper really needed. But I do still salt and pepper mine usually.
 
If you grill at home and hit that perfect seer and temp around 130-135ish, medium rare is the answer. Like another poster said, at a restaurant, request rare if you like medium-rare. They always overcook a bit. Fine steakhouse or lower tier, they all do it. Maybe liability reasons, or people not knowing wtf they're doing. Regardless, they all do it.
