Although this year brought us the Rona, it inadvertently turned the Mrs and me into decent chefs. We never really experimented with things as we were on the move all the time. This year slowed things down a bit. Not sure if anyone else is making meals, or trying new recipes that they wouldn't have before but here are some of my faves throughout the year so far. Would love to see yours too if you have some!

That pizza looks solid. I use a cast iron skillet but I’m leaning towards a pizza stone

JFC can I come over?

That all looks legit. How'd you do the pizza?
It’s 2 and 1/4 teaspoons of dry yeast. 1 tablespoon of brown sugar. 1 and 1/2 cup warm water (you may already know this, but the water HAS to be just warm. Too cold, won't rise. Too hot, it'll kill the yeast.) Let sit In the bowl to proof for 10 mins.

Then add 1tsp salt and 2tbs olive oil and mix in 3.5 cups flour. Once it’s mixed, adding a little flour as you go, and not too sticky, place it in a bowl with a warm wet towel covering it. Place it in the oven (not on) for about an hour. Once the dough has risen, shape it into your pizza and place it in the oven for about 5 mins at 425. Once it's hardened a bit (hehe), take a stick of butter and rub the rim of the crust really well. Add your sauce, then meats, then the mozzarella or mixed cheese. Then, put it back in at 425 for 15-20 mins in lower altitude, 17-22 mins here in a place like Colorado.

Awesome, looks like it turned out great.

I'll have to bookmark this for the future.

Sorry, keep in mind, you'll have some extra dough. We currently use a 13" pizza stone and this is generally too much dough so that's why we made the pepperoni/mozz stuff rolls also. We have a 16" one on the way, so this dough recipe should be good for one pizza.

I love food. Shit that all looks good. I've done a ton of cooking in my day, was a job in high school and parts of college.

I did some smoked queso recently that was the tits. I also enjoy a nice grilled pizza. Especially a Grilled Hamburger Pizza. Fuck it's good, and not with pizza sauce, the base has to be Ketchup and Mustard.

Had a 10 person text thread going where we checked in daily and posted a shit ton of food pics.
Just random shots from those, always with beer in special cups/mugs

Man, all of this looks amazing!

Football Saturdays would be complete in my house if this was on the menu... holy schmokes.
I will add, for a football Saturday. Smoked Spicy Pretzels.

It's Pretzels, a little olive oil, ranch dry seasoning, and some cayenne pepper. Smoke for 1.5 to 2 hours. I could drink beer and eat those all fucking day.

Chiming in specifically to say I'm pretty impressed with how those all look. Each picture appears damn appetizing. Good work.

I could dip that in the queso have a heart attack the next day and die happy. Assuming Nebraska won of course.

Thanks!
Well the pizzas are easy, and the beer is Ballast Point, and the other food is BLUE APRON.
Which was GREAT during the first of the LockDown and gave me 6 meals automatically, that I cooked myself to keep me brain occupied during the LockDown as well.
Worked out great for me.

Man, this thread really made me realize I was slacking on the production of the food porn this year. One nice thing about being back in the States has been getting back into cooking (food is just too easy, cheap, and delicious to find in China to spend time cooking at home).

Alas, I only have pics of our family Christmas prime rib (from late January), a 3-meat Dutch oven BBQ, a few steaks, and then these two delightful non-meals:

Grilled peach bourbon smash:

Mexican fried ice cream:

I think my favorite pleasant surprise I made this year was a Dutch oven lemon garlic roasted chicken w/ summer vegetables (summer squash, carrots, celery, potatoes). Difficult to claim a chicken and veggies turned out amazing, but damn did it knock our socks off. Also made moussaka...a lot of work, but damn tasty.

Also got the homemade Runza factory going, @LoudHogRider (sorry, no pics there either...made them too many times to think to take pics these days).

Moussaka is something we’ll have to try very soon lol. Looks incredible!

What temp do you smoke those at? Or do you cold smoke them with a smoke tube?
