Christmas Eve/Day food thread

We always have oyster stew for Christmas Eve - family tradition. I'm picking up my 92 year old Dad tomorrow afternoon and bringing him to my house for a few days to celebrate with family. That sumbitch is making the oyster stew or I'm putting him on the back deck. 😉

Recipe - Oyster Stew

1 Teaspoon - Worcestershire Sauce
1/4 Cup - Butter
1 Pint - Fresh Oysters
2 Cups - Fresh Milk
1/2 Cup - Light Cream
1 Teaspoon - Salt
Dash - Pepper
Dash - Paprika
Pinch - Cayenne Pepper (crushed red pepper)

Pan #1
Melt butter in small saucepan.
Add oysters.
Cook and stir over low heat just until the edges of the oysters curl.

Pan #2
In another saucepan, heat milk and cream (do NOT curdle the milk).
Once this begins to steam, stir in the salt, pepper, paprika and oysters.
Season to preference (I like to add extra cayenne pepper & paprika in mine).

Makes four (4) servings - 1 cup each.

Shrimp grooviness.....consists of jumbo shrimp sauteed in a thick white garlic creamy sauce served with asiago bread pieces. Also searing an aged ribeye in the cast iron skillet to slice and serve as mini sliders with horseradish sauce. Prime rib Saturday after a day on the local ski hill.
 
Yep, I’m serious. I’ve tried prime rib every way. Always delicious. But the best is a short smoke, and then reverse sear at high temp.

I'd definitely try it, as I LOVE a good piece of meat. 😎 There was a mini argument earlier this week in a thread on RSS about smoked vs. roasted prime rib. The issue I have is that I like the taste of meat so much, that I don't want it competing with other flavors. Light smokes sounds delicious.
 
Doing a traditional roast tomorrow. Some Chili tonight.

The lady's side of the family(Messicans) has basically put cooking traditional whoooite food in my hands since last year. They were horrendously bad at cooking holiday meals, so it's a good trade off. They are making tamales tonight until ungodly hours, so I'll be eating them mugs for the next couple of weeks...sooooo good.
 
Not cooking a damn thing. Had prime rib for family Christmas last weekend, so we really aren’t up to much tomorrow. Just heading over to some friend’s house around lunch to drink a shameful amount of alcohol.

When I was dating a “MessicAn”, we used to make posole and tamales and wash it down with some Don Julio. Hard work with a very rewarding finish
