Doyle Preston who was a 3rd string qb and starting punter at Arkansas in the 90s was an ambidextrous QB. He also started at 3rd for the Razorback baseball team. Ended up in the Reds organization.
Would roll right and throw with his right. Roll left and throw with his left. Threw 87 from the left side and 83 from the right.
Was also a great basketball player.
His little brother Darrell was in my class and he was recruited to play d1 baseball and basketball and would have been a d1 qb recruit but opted not to play football his senior year.

Chris Leak claimed he could throw right or left handed when he was at Florida. not sure if he ever threw lefty in a game, though
Former CU QB Darian Hagan was as well, although CU was running the Power I back then and rarely threw the ball.
