Different sugar syrups, different bitters, stuff like that. Nothing too crazy. My favorite variant is:What variants of old fasioneds?
2 oz rye
.25 oz runamok cinnamon vanilla maple syrup
.25 oz cold brew coffee
3 dashes of chicory pecan bitters
Another good one is:
1 oz rye
1 oz Apple brandy
.5 oz honey syrup (2 parts honey, 1 part water)
3 drops orange bitters
Both served with large clear ice cube.
The Old Fashioned cocktail comes from the original print of the word “cocktail”. It defined it as spirit, sugar, bitters, water. Eventually other cocktails came about so to specify what people wanted they asked for the drink the old fashioned way.
So, a lot of flexibility in how you make your old fashioned. Just keep it balanced.
