Possibly the most common burner issue with these things is spiders building nests inside the burner. Get a brush to clean inside the tubes.

Some people have mentioned you can use a cast iron griddle on a grill, but I just love having the elbow room to work as I cook. The cleanup is pretty easy with it too. I also like to play Japanese chef and try tricks, but man it is WAY harder than it looks. I give kudos to those chefs. To be able to cook everything the way it needs to be cooked, to do all those tricks, and to do it in a short amount of time is pretty amazing once you try it yourself.
 
My Masterbuilt Gravity Series 800 came with a griddle insert too, but so far I've never used it. Nice to have if I ever need more space than my little 22" Blackstone, though - it's basically the same size cooking area.

I have the 900 (Costco’s version with the pizza oven insert instead of griddle) I absolutely love it! It’s extremely easy to use, I cook pretty much anything from burgers, to wings to pork butts on it. It gets up to 700° for the pizza oven so I have used that a few times as well. The way the heat comes out of the manifold makes me wonder how convenient the griddle would actually be though.
