Going there next week. Never done anything all inclusive. Going with the ball and chain's family. Not really sure what to expect. Anything can't-miss while I'm there. Any random tips or tricks?
 
We took our family to Moon Palace in October of 2019 and had an absolute blast! I assume that you booked the high-end one, which gives you access to their other 2 resorts (all three are next to each other). If so, make sure that you take advantage of that by going over to the Brazilian Steakhouse on one of their sister resorts. Since we had the kids, we didn't really do excursions. When my wife and I were at the Excellence, we did a couple of great excursions where we zip lined and swam in the sonates.

Yes we've got access to all of their resorts. I'd like to go on a couple of excursions but I might be the only one in the group who wants to. I'd like to do the zip line and one of the jungle excursions.

Calculate how much the cost is of a drink and try to make the establishment lose money.

Tip the person bringing the booze early (usually $10/20). They then take care of you the rest of your time.

Room service later at night is a game changer

If you're looking for a day trip I recommend the short boat trip to Isla De Mujeres. Very cute island and the mode of transportation for the most part is by golf carts which you can rent. Beautiful views and great fun just to cruise around the island. As I recall it's about a 45 minute boat trip. There are local tours which will hook you up. Not terribly expensive when we did it but that was a while back.
 
Went there a couple years ago for my buddy’s wedding and loved it. We did one catamaran excursion with the wedding group but outside of that just drank, ate, and laid by the pool. It was amazing.

Same. Catamaran, golf and a shitty fishing excursion.

The fishing excursion I knew was going to be rough when I went up to the counter and it had all the fish with the best months to catch them. November was blank. Then we got on the boat and he opened the giant cooler where 5 beers and a bottle of Jose Cuervo were rolling around with no ice. Caught a bunch of little groupers. The resort cooked them for us which was pretty good.

I didn't know there was a fishing excursion to do. That's something I'd really like to do. Wonder what it's like for May.

How much cash should I be bringing with me? Should I be concerned about taking valuables with me or are the resorts pretty secure in that regard?

The rooms have a safe in them, so you shouldn't worry about that. We locked up anything that was valuable (cash we brought for tips, phones, computers, etc...).

As for money, it depends on what you're going to do.

For tips, I always did:

$2/day housekeeping
$1/person for breakfast buffet
$5 if we had a nice lunch
$10 for a nice dinner
$1 for turn down service

A few bucks here and there for your bartenders, pool people, etc... If you got great service from a particular person over multiple days, a lot of times I would try to find them and give them a $20 before we left. USD goes a long way with them.

Also, if you can, make sure you make note of the names of anyone that gives you great service and then mention them specifically in a review for the resort when you're done. We had one guy that we did that for that sent us an e-mail after the fact saying how grateful he was because the resort gave him an extra 2 days of vacation because of the review (he works 6 days a week at the resort and basically gets no vacation).
 
I think I paid an amount up front for tips which the resort probably kept. I don't really remember for sure.
