Bench scrapers make quick work of cleaning a griddle. That's pretty much how I do steaks, albeit I switch at a lower temp. I smoke them to maybe 110F and then switch over to the Blackstone for searing.

Some newer Blackstone models have the wind guards built in. But you can get the magnetic ones pretty cheap, so it's probably not a big deal.
